Canvas Suites is now fully open for business as well as Canvas Coffee & Waffle Bar, 201 East 6th Street in downtown Sedalia.

Stephanie and Matthew Holem are the owners of the business, which houses around 20 suites featuring health & beauty professionals in the hairstyling business, skin care specialists, a pelvic floor specialist, a nail specialist and many more.

Canvas Suites is open 7- 3 Monday through Saturday.

There are actually three empty suites available right now if you are interested. Simply call (660) 460-3542 to set up an appointment.

“We bought the building in 2020, we did a year of renovation, and opened Canvas Suites a year and a half ago,” Stephanie said. The building itself dates back to 1961. The building previously was owned by First Baptist Church across the street, and before that housed Boonslick Regional Library.

The new coffee shop, Canvas Coffee & Waffle Bar, opened up a little over three weeks ago. That space was previously a garage that has been totally remodeled by Stephanie and her husband Matt. The coffee shop has a separate entrance from Lamine.

Stephanie has been a professional hairdresser for 16 years, and she loves working with her clients. “I was looking for a space of my own, and the concept of salon suites is big in Kansas City, where I'm from, and so we created it here,” she said.

“So I drew out how I wanted everything to look, then we took it to Septagon Construction and their architects,” Stephanie recalled.

At Canvas Coffee, you can order specialty lattes, paninis (hot grilled sandwiches made with fresh ingredients) fusion drinks and more.

“We have a limited menu, so we try to be really good with fewer options, instead of offering every drink and food. We're trying to do less and do it well,” Stephanie said.

“So when I was a teenager, I went to Belgium and tried Liege waffles and fell in love with them, and so when I was designing the coffee shop, I wanted something that was unique and real yummy and that would compliment the coffee, and Liege waffles are them,” Stephanie proclaimed.

“We made the dough from scratch and we use tasty, fresh ingredients,” she noted.

Canvas Coffee sells Twelve Gate Coffee. “It's amazing,” promised Stephanie. “It's well worth it.”

The baristas who made this reporter's Churro Liege Waffle (with whipped cream on top) were Angelina Radetskiy and Hailey Rank.
